KOO Pea Fritters with Tzatziki

KOO peas are processed with in 24 hours of picking.  Prepare our KOO Pea fritters as a side dish or as part of a finger food platter.   

For the fritters:

  • 750 ml KOO Peas, drained                     
  • 2 Eggs                   
  • 30 ml Mint, fresh, chopped                      
  • 1/2 Lemon, zested                        
  • 30 g Feta, crumbled                                
  • 50 g Golden Cloud Self Raising flour                     
  • 50 ml Oil 
  • 4 g Salt and Pepper 

For the tzatziki:

  • 250 ml Greek yoghurt 
  • 150 g Cucumber, cubed 
  • 15 g Garlc, crushed 
  • 2 g Salt and Pepper


1. Blitz the peas and all remaining ingredients except oil in a food processor until just blended and the peas are still fairly coarse. Cover with cling wrap and chill for 30 minutes.

2. Heat enough oil for shallow frying in a pan. Drop tablespoons of pea mixture in the pan and fry on both sides until golden. Drain on paper towels.


3. Put all ingredients together and mix well.

To Serve

4. Serve the fritters with the tzatziki.

 Chef tip:

KOO Peas can also be substituted with cooked and drained Lion split peas
