Baked KOO Peach Bread and Butter pudding

Transforming discarded croissants into a delectable delight, our KOO Peach Bread and Butter Pudding is a baked masterpiece that gives new life to stale pastries. This sustainable recipe not only reduces waste but also elevates the humble croissant to a peach-infused, comforting indulgence. Perfect for your restaurant or coffee shop, it's a sweet ode to resourcefulness and flavour innovation.


Yield: 6-8 portions

  • 6 large Stale croissants, sliced
  • 1 tin (410 g) KOO peach slices, drained
  • 80 g Beacon Heavenly White chocolate slap
  • 75 g       Butter


  • 1000 ml Pouring Vanilla custard
  • 250 ml Pouring cream
  • 50 g Sugar
  • 10 ml Vanilla essence
  • Spray and Cook

To serve:

  • 1 tin (410 g) KOO peach slices, drained
  • Choice of         Whipped cream, Ice-cream or warm custard
  1. Preheat the oven to 180°C. Spray and Cook an oven dish or individual ramekins.
  2. Layer the sliced croissants in the oven dish attractively and top with drained peach slices and then scatter white chocolate over the top.
  3. Whisk all the sauce ingredients together and pour all over the pudding. Allow to saturate and stand for 10 minutes before baking.
  4. Dot the butter cubes over the top of the pudding.
  5. Bake for 20 to 30 minutes until light golden and crispy on the top and heated through.
  6. Serve with extra Koo Peaches and vanilla ice-cream, whipped cream or warm custard.
